Apricots Stuffed with Cherry Preserves
Preparation time: 20 minutes
Wash the apricots, cut in half lengthwise, remove pit, and stuff with the chopped almonds mixed with 1/2 cup preserves.
Place the apricots on a baking dish and dust them with the sugar. Pour 3 tbsp of water into the bottom of the dish.
Bake at 350 degrees for approx. 10 minutes or until tender.
Transfer the apricots to a serving plate.
Combine remaining preserves with butter and sugar in a small saucepan. Heat sauce to thicken slightly, pour over apricots and serve decorated with sprigs of mint.
