Ingredients (Makes 2 quarts)
- 2 Jars Bonne Maman® Apricot Fruit Spread
- 2 Each Chicken breast, cooked and diced into large pieces.
- ½ Cup Celery, diced small
- ½ Cup Radish, diced small
- ¼ Cup Cucumber, diced small
- 2 each scallion, coined
- ½ Cup Mayonnaise
- 2 Tbsp. Whole grain mustard
- 2 Tbsp. Apple cider vinegar
- 2 Tsp. Salt
- 1 Tsp. Black pepper, ground
- 1 Head butter lettuce, leafed into cups
In a large mixing bowl, combine mayonnaise, vinegar, mustard, and 4 tablespoons of Bonne Maman® Apricot Fruit Spread.
Combine chicken, cucumber, radish, scallion, and celery with the mayonnaise dressing.
Season with salt and pepper.
Serve inside of the butter lettuce cups with a generous dollop of Bonne Maman® Apricot Fruit Spread.
