Winter Spiced Belgian Waffles with Four Fruits Preserves


  • ¾ Cup All Purpose Flour
  • ⅓ Cup Cornstarch
  • 1 tsp. Baking Powder
  • ½ tsp. Salt
  • 3 tsp. Sugar
  • 2 Eggs Separated
  • 3 Tbsp. Butter Melted and Cooled Slightly Plus More for Griddle
  • 1 Cup Whole Milk at Room Temperature
  • 1 tsp. Pure Vanilla Extract
  • ½ tsp. Freshly Ground Nutmeg
  • ½ tsp. Cinnamon
  • 2 tsp. Freshly Grated Orange Zest
  • Bonne Maman Four Fruits Preserves
  • Makes 4 waffles


In a large bowl, whisk flour, cornstarch, baking powder, salt, sugar, nutmeg and cinnamon until well combined. In a small bowl, whisk egg yolks, melted butter, milk, vanilla extract and orange zest.

With a stand-up or electric mixer, beat egg whites just until stiff peaks form.

Combine the milk mixture with the dry ingredients and stir until combined and mostly smooth.

Fold egg whites gently but completely into mixture. Batter will not be completely smooth.
*Tip, use a figure eight motion to more effectively fold in egg whites without losing volume.

Lightly brush waffle griddle with more melted butter, and fill griddle with batter. Cook for 4–5 min or until golden brown.

Keep warm on racks in the oven until ready to serve. Serve with Bonne Maman Four Fruits Preserves.
*Optional additions: whipped cream, powdered sugar and butter.
