Bonne Maman Apricot Chicken Stir Fry

  • 9 oz Bonne Maman Apricot Preserves
  • 2 tbsp. canola oil
  • 3-4 lg. chicken breasts, skinless & cut into cubes
  • 1 tsp. minced garlic
  • 1 tsp. ginger root, chopped
  • 1 c. each Red Pepper, Onion and Lettuce Leaves or Broccoli
  • 4 tbsp. stir fry sauce


Heat oil in a large skillet or wok. Sauté chicken until done and remove from pan.

Fry garlic, ginger, lettuce leaves or broccoli, red peppers and onions until soft, about 5-10 minutes.

Add chicken, Bonne Maman Apricot Preserves and stir fry sauce. Cook and stir until slightly thickened.

Serve with rice or noodles if desired.

Yield: 6 servings.
