- 9 oz Bonne Maman Apricot Preserves
- 2 tbsp. canola oil
- 3-4 lg. chicken breasts, skinless & cut into cubes
- 1 tsp. minced garlic
- 1 tsp. ginger root, chopped
- 1 c. each Red Pepper, Onion and Lettuce Leaves or Broccoli
- 4 tbsp. stir fry sauce
Heat oil in a large skillet or wok. Sauté chicken until done and remove from pan.
Fry garlic, ginger, lettuce leaves or broccoli, red peppers and onions until soft, about 5-10 minutes.
Add chicken, Bonne Maman Apricot Preserves and stir fry sauce. Cook and stir until slightly thickened.
Serve with rice or noodles if desired.
Yield: 6 servings.
