Fresh tomato, avocado, feta and Fig Preserves vinaigrette come together for a light and tasty sandwich you’ll love.
Yields: 12” of ficelle or baguette sandwich
1 ficelle or baguette sliced lengthwise
2 tbsp room temperature butter
1 sliced medium avocado
2 oz sliced feta cheese
1 sliced plum tomato
½ cup of thinly sliced fennel
1 ½ cup baby arugula
1 tbsp olive oil
1 tbsp Bonne Maman® Fig Preserves
2 tsp white wine vinegar
1 tsp Dijon mustard
Combine vinegar, oil, Dijon mustard, and Bonne Maman® Fig Preserves in a small jar. Cover and shake until combined and emulsified.
In a bowl, toss arugula and vinaigrette mixture until greens are evenly coated.
Spread butter lightly on bread. Neatly array dressed greens and top them with sliced fennel, tomato, avocado and feta. Spread additional preserves on the underside of the top half of the bread if you wish to have a sweeter, fruitier sandwich.
