Bonne Maman’s Pastry Guide to Paris

This 4 mile walking tour around Paris takes you from breakfast to an early supper, stopping to see the Seine, Notre Dame and up and down the wonderful winding streets of Paris sampling sweet and savoury treats along the way.

Des Gateaux et Du Pain

This bakery from chef Clare Damon is a minimalist paradise, where breads, cakes and pastries are elevated to art and placed in glass cases. Home to the best croissant in Paris, it’s the perfect start to the day.

La Grande Epicerie

This stop is a foodies paradise. A gourmet supermarket home to a wide selection of French produce, it also also home to a very large selection of Bonne Maman Preserves and Jellies as well as other treats exclusive to France.

Henri Le Roux

At Henri Le Roux chocolates and caramels are abundant. But the real treat here is the salted butter caramels. The yummiest in Paris – also worth sampling are the Tea and the Pineapple and Pink Peppercorn.

Patrick Roger

Famous for their pralines Patrick Roger is a chic chocolate spot complete with remarkable chocolate sculptures.

Aux Merveilleux de Fred

One of the most delightful bites in Paris comes in the form of a cloud of cream, chocolate and meringue at Aux Merveilleux de Fred. Merveilleux translates as marvelous, and it truly is.

Caractere du Cochon

After a lot of sweetness, it’s about time for something savoury. A Jambon Beurre is a french staple, crusty baguette, a thick spread of butter and and thick cut ham, it’s simplicity is it’s perfection. It’s one of, if not the best in Paris, and comes highly recommended by the legendary David Lebovitz.

Pierre Hermé

The best macaron in Paris is a hotly contested title, but up there on many lists is Pierre Hermé. With a variety of surprising flavors, asparagus for example, as well as classics like salted caramel, they’re a must stop.

L’Éclair de Génie

The eclair is a French patisserie must do, and the vibrant colors and exciting flavors at L’Eclair de Génie are well worth a stop. The difficulty is choosing which one to indulge in, so take a friend and get sharing.

The little sister of the eclair is the cream puff, a perfect puff of choux pastry, filled with a delicate cream and topped with fondant. At Popelini the flavors include classics like dark chocolate and coffee and lighter fruity options such as raspberry rose and passionfruit.

Fromagerie Beillevaire

Would it be a trip to France without sampling some fromage? Fromagerie Bellevaire is home to a phenomenal selection of cheese, including a large variety of artisanal goats cheese. Once you’ve gathered your cheese selection, head to a nearby park such as Place Des Vosges and picnic just like the French.

Spring Berry Naked Cake

For the cake:

3 cups cake flour, sifted
2 teaspoons baking powder
½ teaspoon sea salt
1 cup whole milk
½ cup Bonne Maman® Strawberry Preserves
2 sticks unsalted butter, softened
2 cups sugar
4 large eggs, room temperature
1 ½ teaspoons pure vanilla extract

For the mascarpone frosting:

12 ounces mascarpone cheese
2 teaspoons vanilla extract
¾ cup powdered sugar
1 ½ cups heaving whipping cream

For the Layers:

½ cup Bonne Maman® Strawberry Preserves
½ cup Bonne Maman® Wild Blueberry Preserves
½ cup Bonne Maman®  Raspberry Preserves

For garnish:

Fresh strawberries, blueberries, and raspberries

Preheat oven to 350˚F. Butter and flour four 8”cake pans and line the bottoms with parchment. Note: If you will only be using two cake pans, thoroughly clean and dry pans prior to refilling and baking the final two cakes.

In a medium bowl, whisk together flour, baking powder and salt. In a separate bowl, whisk to combine milk and strawberry preserves.

In the bowl of a stand mixer, cream butter until smooth. Beat in sugar until light and fluffy. Add in eggs one at a time, until combined. Beat in vanilla.

Add flour mixture in three parts alternating with milk mixture, beating well after each addition. Divide batter evenly between cake pans making sure they are leveled and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Let cakes cool in pans 10 minutes. Carefully remove cakes from pans, remove parchment and allow to cool completely on a wire rack.

While the cakes bake, make the frosting. Attach wire whip to mixer and begin beating mascarpone, followed by vanilla then powdered sugar. Gradually add in whipping cream, beating until frosting is light and fluffy.

To assemble, level all the cake layers by cutting off the domed part with a serrated knife. They should mostly lay flat and be easy to stack. Place bottom cake layer on a serving plate or cake stand. Top with a thin layer of frosting, then the Strawberry Preserves, spreading the preserves to the edge of the cake, but not too much—a little bit of preserves should meet the edge of the cake on each layer so that when the frosting is spread on the outside, it picks up a small amount of the preserves.

Place a second cake layer on top of the first, spreading a thin layer of frosting and then the Wild Blueberry Preserves to the edge. Top with the third cake, a thin layer of frosting and the Raspberry Preserves. Place the final cake on the top and spread the remaining frosting in a thin layer on the top and sides of the cake. Run your spatula around the edge of the cake to scrape away any excess frosting. Garnish the top with fresh berries.

It is recommended to make this cake the day you plan to serve it. It will last for several days refrigerated after that.

You can expect to get approximately 14 servings from the cake.

Garden Inspiration

Garden Inspiration

Fans of Bonne Maman have found infinite ways to use Bonne Maman jars in their gardens.

Dani recommends ‘re-potting’ fresh herbs in her jars –

“They make a pretty, scented display- close to hand on the kitchen window ledge, and it is much easier to check through the glass that you are not under or over-watering”.

Thanks to keen gardener Terry for sharing a handy new use for his left over jars –

“just perfect for keeping low hanging strawberries from touching the ground and free from the attention of those early rising blackbirds.”

Jars can add twinkling atmosphere at parties too. Janette decorated her garden with “pretty ‘glow worm’ jars for a party”.

Marianna designed her own “vases with floating tea lights and dotted them along the raised boarders in the garden”.

Picnic Perfect

Picnic Perfect

On a beautiful summer’s day nothing is more enjoyable than setting out for a picnic, away from the crowds, under the shade of a large tree with a basket of delicious food. There’s something very special about eating outside, and why not add charm to the occasion by serving up some of the food and drink in Bonne Maman jars?

Preserves jars are perfect for individual servings of fresh chilled soups, individual servings of salad, hard boiled eggs, toasted nuts, and delicious lemonade.

If you are taking in a Summer concert or play on your blanket in the long light evenings, just add jars of pre-mixed coolers or cocktails to complete the ‘al fresco’ evening scene.

Paint Away

Paint Away

For those summer holidays when the weather is not so kind – take time for some artistic inspiration. Break out the paints and try your hand at some peaceful sketching or watercolors. Perhaps involve the whole family and encourage the youngsters with a summer arts and craft design challenge inspired by the local landscape. Bonne Maman jars are useful for storing and organizing the brushes, pencils, crayons, and collage elements needed to bring the whole thing to life.

Color ‘lining’ the jar interiors is also a lot of fun and allows you to add pops of color to your art area.

Take a small pot of acrylic paint – easily found in hobby and craft shops – and pour in gently at a diagonal, swirl slowly, slowly, slowly around the interior for an even, smooth color block finish. Then be a little patient as the jars dry.

Once completely dry, add some personal finishing touches – perhaps raffia or twine, pretty check ribbons, or bows and name tags.

It’s very easy for the family sewing box to become muddled.

Bonne Maman’s handy jars make it much simpler to organize all the bits and bobs in an efficient and attractive way. Cotton reels, buttons, needles, tape measure, pieces of fabric and ribbon can all be tidied away and easily found.

Use a spare piece of your favorite material to make a colorful pin cushion to stick onto the lid of a jar to make it both functional, and eye-catching at the same time!

Gardening with Bonne Maman

Gardening with Bonne Maman

As the days start to lengthen-

-and the sun makes its tentative appearance, it’s time to head out into the garden and tidy up after winter.

Now you can actually see the soil through the leaves, you can start to think about planting for the summer, tying in your climbers, and perhaps cutting some daffodils for the kitchen table.

Bonne Maman jars have so many uses in the garden, why not pierce a hole in the lid of a conserve jar to use as a string dispenser? The jars are also the perfect size and shape for potting hyacinths to give your home a sweet and fresh fragrance.

You can also use your empty jars for storing plant labels, seed packets, small bulbs, and the myriad other bits and bobs you need to make your garden really spring into action.

Beautiful Bouquet Garni

Beautiful Bouquet Garni

Variations of the classic ‘Bouquet Garni’ (which literally translates from French into “a garnished bouquet”) have been around since the early 1600’s. This timeless method of infusing casseroles, sauces, stocks, and stews with the aromatic flavors of fresh herbs is a wonderfully simple way to add a new dimension to household favorite recipes.

Traditionally, bundles of fresh herbs were wrapped in cheese cloth, added at the beginning of cooking and removed before serving – allegedly, to prevent dinner guests from discovering the secret ingredient of well-guarded family recipes! These days, bouquet garni are a beloved country kitchen staple and are super easy to make. Simply gather some of your favorite fresh herbs (dried also work) and pop them into a muslin bag.

If you don’t have this on hand, take a spare coffee filter or empty a teabag, place the herbs in the middle of the material, then gather the edges until the herbs are encased and tie at the top with string. Storing pre-made bouquet garni in a sealed container is key to prolonging freshness and aromatic scents… naturally, a classic Bonne Maman jar is surely the most chic option.

Traditional bouquet garni ingredients include parsley, thyme, and bay leaves, but other popular additions include rosemary, lemon peel, fennel leaves, peppercorn and even chilis!

A selection of ingredients for each person to create their own preferred assortments becomes easy once the simple storage of Bonne Maman jars is brought into play.

“…allow everyone to pick and choose their own perfect recipe.”

Spice It Up

Spice It Up

You can make a bold style statement with this simple but effective idea for storing herbs and spices. Jars filled with the different colors and shapes of favorite flavorings such as cinnamon sticks, mace, pink and green peppercorns, cloves, and star anise will give a unique look and ambiance to your kitchen, walk-in storage cupboard, or food preparation area.

Simply attach Bonne Maman lids to the underside of a shelf, fill the jars and screw ‘upwards’ in place for an eye-catching and easy-to-use kitchen feature.

This same principle works really well for handymen and women too – simply fill with bolts, screws, widgets, nails, batteries, super glue tubes, etc. and transfer to the garage or workshop. Now you will always be able to find that vital picture hook just when you need it!

Preserving Your Harvest

Preserving Your Harvest

You can enjoy harvest season for months to come by preserving your fresh fruit in Bonne Maman jars.

Confit, for instance, can sound complicated but is really a simple, traditional method of storing fruit in a sugar syrup. Lemon confit, for example, is delicious and will keep refrigerated in its syrup for weeks. Many variations exist for adding a subtle, citrus dimension to many savory and sweet dishes. Whole or quartered lemons are great for savory dishes such as Moroccan tagines, while slices are perfect for decorating tarts and cakes – better yet, try them on a cheesecake with an added layer of our soft set Lemon Curd.

Here is a simple, sliced lemon confit version to try:

Heat oven to 300F

Make a sugar syrup by bringing 2.5 cups white sugar and 2 cups water to boil, simmer for 2 minutes until all sugar has dissolved.

Wash, trim, & thinly slice lemons – 5 or 6 depending on size – and remove seeds.

Lay slices, slightly overlapping, in rows on a baking sheet. Overlay with a sheet of baking paper on top – pricked all over to allow moisture to escape – and then cover whole tray with foil.

Bake for 50-60 minutes until slices are translucent. Remove foil and bake for a further 30-40 minutes until sugar is syrupy. Cool before using or storing in compote jar with syrup and a dusting of added sugar to taste / dress.

February 2nd is La Chandeleur in France or “The Day of Crêpes”. Not only is the holiday celebrated by eating a lot of crêpes, but the French also do a bit of fortune telling while making them. It is traditional to hold a coin in your writing hand and a crêpe pan in the other, and flip the crêpe into the air. If you manage to catch the crêpe in the pan, your family will be prosperous for the rest of the year! Give it a try!

Crêpes are easy to make: simply cook a basic batter in a frying pan, fill it with your favorite flavor Bonne Maman Preserves or Jelly and you are set for a treat any time of the year!

Scones with Bonne Maman® Preserves

Fresh-baked scones with our traditional fruit preserves are a delightful, simple treat.

Scones are wedges of traditional baked breakfast bread that are satisfying, delicious and perfect with our all natural fruit preserves.

Made from a batter of flour, sugar, baking powder, butter, milk or cream and eggs, scones are light and moderately sweet – making them ideal pallets for showing off the flavors of Bonne Maman!

Preserves can be used as a topping or mixed in with the batter and baked into scones for an even more flavorful version. Mixing the ingredients together properly is the key to making scones. It works best to hand mix the dough to avoid over mixing, which can make scones too hard or flaky. Fresh fruit, nuts and other flavorful items are great additions.

We suggest using Bonne Maman Blueberry and Strawberry Preserves, which add the sweet flavor of juicy berries. The combination of the preserves and fresh berries make for a sweet, fresh-tasting scone that’s light, fluffy and not too rich.

3/4 cup heavy cream or milk
2 cups blueberries or chopped strawberries
½ Cup Bonne Maman Wild Blueberry and Strawberry Preserves
1 Jar of Bonne Maman preserves to use as topping
Combine the flour, sugar, salt and baking powder in a bowl. Cut butter into the flour until the mixture resembles crumbs.
In a separate bowl, beat two eggs until they’re light and airy. Add ¾ cup heavy cream or milk.
Add the wet ingredients to the dry ingredients. Stir in the blueberries or chopped strawberries, and Bonne Maman Wild Blueberry and Strawberry Preserves. Mix the dough until it all comes together, being careful not to over mix.
