- 1 ½ Cups Gluten-free rolled oats
- 1 Cup Almond flour
- ½ Cup Brown sugar
- 1 Tsp. Baking powder
- 1 Tsp. Cinnamon, ground
- 1 Tsp. Vanilla paste
- ¼ Tsp. salt
- ½ Cup Butter, unsalted/cubed
- ½ Cup Sweetened shredded coconut
- 1 Jar Bonne Maman® Pineapple Passion Fruit Preserves
- 1 Cup Pineapple pieces
Preheat oven to 350ºF and coat 9×13 baking dish with cooking spray.
In large bowl, mix together flour, Gluten-free rolled oats, brown sugar, baking powder, cinnamon, and salt.
Add cubed butter and mix with your hands until crumbly.
Divide oat mix in half. Add shredded coconut to one half of the oat mix, then set the other half of the oat mix aside to use for the topping.
With your hands, press your coconut oat mix evenly into the bottom of the prepared baking dish.
Add your Bonne Maman® Pineapple Passion Fruit Preserves and crumble the reserved oat mix over the jam.
Bake for 15 minutes, remove, add pineapple pieces and return to oven for 15 minutes or until golden brown.
Cool completely in the dish, on a wire rack. Slice into 12 bars and serve!
