Scandinavian Fruit Tart

Brighten up winter with some freshly baked Scandinavian mini jam tarts made with our Bonne Maman Four Fruits Preserve. Inspired by hallongrottor, a traditional Swedish jam tarts recipe, this Christmas fruit dessert makes an ideal holiday treat. 

The recipe features a buttery, crumbly cookie base filled with a luscious combination of premium quality cherries, strawberries, redcurrants, and raspberries, topped with sliced almonds and powdered sugar. These delightfully sweet jam fruit tarts are easy enough to make whenever you have a craving and sophisticated enough to serve at your next holiday party! Made Simply, With Love!

Ingredients:

  • 2 sticks unsalted butter (room temp)
  • Zest of 1 lemon
  • 1 tsp. vanilla extract
  • ½ Cup powdered sugar
  • 1 ½ Cups All-purpose or cake flour
  • 1 tsp. Baking powder
  • ¼ tsp. Salt
  • ¾ Cup Cornstarch
  • ½ Cup Bonne Maman® Four Fruit Preserves
  • ½ Cup Sliced almonds (for garnish)

Directions

Preheat the oven to 350ºF.

Spray a muffin tin with cooking spray and set aside.

In a large bowl, mix the softened butter, lemon zest, and vanilla extract.

Sift the sugar into the bowl and mix well.

Gradually fold in the sifted flour, baking powder, and salt, and mix well. Use a wooden spoon so that you don’t overwork the dough. 

Add the sifted cornstarch and mix until a soft dough forms.  

Make walnut-sized balls with the dough and gently place them into the muffin cup molds, patting them halfway up the sides.

Using a spoon, carefully fill each cup with Bonne Maman’s Four Fruits Preserves. Be sure not to overfill them. Top with the sliced almonds then place the pan in the oven.

Bake for 15 to 20 minutes until the jam tarts are slightly golden and set on top. Remove the muffin pan from the oven and place on a wire rack.

 

Serve: Allow the tarts to cool completely before removing them from the pan. Sift some powdered sugar on top and serve with fresh winter fruit and a hot cup of tea.
