- 1 1/2 cup flour
- 3 tbsp sugar
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 large eggs, separated
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups whole milk, room temperature
- 1/2 tsp instant coffee
- Cooking spray
- Fresh Cherries
- Slivered Almonds

Preheat waffle iron to the manufacturers’ specifications.
In a large bowl whisk together flour, sugar, cocoa powder, baking powder, salt, and baking soda.
In another large bowl, whisk together egg yolks, oil, milk, instant coffee, and vanilla.
Add wet ingredients to dry ingredients and stir until just combined. Allow batter to rest for ten minutes. (Note, the batter can be prepared the night before and stored in the fridge overnight.)
In third bowl, beat egg whites until stiff peaks form. Gently fold beaten whites into waffle batter.
Spray waffle iron with cooking spray. Place recommended amount of batter into waffle iron and cook until the waffle is crispy and easy to remove.
