Ice Cream Dream – Marbleized Vanilla Ice Cream With Cherry Preserve
- 1 quart Vanilla ice cream home-made or store bought
- 1 jar Bonne Maman Cherry Preserves
- Allow the vanilla ice cream to thaw in the refrigerator (not at room temperature, or it will go too runny); it should become pliable.
- Line a cake tin or any other mold with plastic wrap; this works best when the film is dampened on one side. Put in a third of the vanilla ice cream. With a spoon, make deep parallel channels lengthways and fill with cherry preserve. Cover with another layer of soft ice cream, make more channels and fill them with the preserves. Cover up with vanilla ice cream. Freeze the ice cream for at least 3 hours.
- To serve, turn the parfait out of the mold, cut into slices and serve with cherry compote if desired. Makes 6-8 servings
