Fig & Manchego Cheese Chicken Roulades
Pound chicken breasts. Spread fig preserve on top of breast and add cheese strips on top of the fig spread. Roll up chicken. Dip the rolled chicken in the beaten egg and then roll in bread crumbs. Cook at 350 for 25 minutes. Take out of oven and spread the remaining fig preserve on top of roulades, then put back in the oven for 5 minutes. When cooked, cut in 3 pieces to make the roulades!
