Bonne Maman Spicy Mango-Peach BBQ Chicken
Combine the Bonne Maman Mango-Peach Preserve, fresh mango, fresh peach, cilantro, lemon juice, vinegar, oil, garlic, chipotle peppers, salt and black pepper in a food processor and puree until smooth. Adjust the seasonings to taste, if necessary.
Place the chicken in a large resealable bag. Add half of the Mango-Peach mixture. Seal the bag. Massage the mixture into the chicken.
Allow the chicken to marinate in the refrigerator overnight (or for around 6-8 hours). Save the other half until ready to grill. Before grilling, take out the reserved sauce and let it simmer over a low heat until thickened, stirring often.
Set some of the simmered sauce aside for dipping.
Preheat a grill or grill pan to medium-high heat and brush with oil. Remove the chicken from the marinade and put on the grill.
Grill the chicken, turning and basting with the simmered Mango-Peach sauce every few minutes, until cooked through, 20 to 25 minutes.
Serve with the reserved Mango-Peach sauce alongside your favorite summer dishes. Enjoy!
